Had a good today. Talked to Jon and Bri through video chat yesterday, so Travis and I are hoping that counts for our communication points for yesterday! Also, here's my first recipe. It was yummy.... Crock Pot Chili Lime Chicken Tostadas Place 2 lbs. boneless skinless chicken breasts in crock pot. Add one chopped onion to the chicken. Combine 1 small can diced green chiles, 3 tsp. chili powder 4 minced cloves garlic and 3 Tablespoons lime juice. Pour mixture over chicken and onions and cook for 4 to 6 hours. Remove chicken from crock pot and shred. Add juice from the crock pot to the shredded chicken. Heat can of non-fat refried beans. Construct tostados: Spread refried beans on Ortega corn tortilla tostado shell. Layer shredded chicken on top of beans. Spread 2 Tblsp. shredded low fat cheese on top of the chicken. Garnish with shredded lettuce, olives, salsa and non fat sour cream.
