Veggie Stuff

If you just do scrambled eggs, or egg beaters in the microwave, just add a couple of those mini sweet peppers (red, yellow, and orange), a green onion, and about 1 Tbsp. of grated parmesan cheese (I get fresh at the deli, I can't go back to the green can now). It's like an omelette - YUM.

Those mini peppers are good for an extra veggie serving with a sandwich, or add a couple to a fruit smoothie - very nice kick.

Another veggie breakfast favorite: a bunch of grape tomatoes, cut up so they won't explode in the microwave. Drizzle with 1 tsp. olive oil, Salad Supreme seasoning, and 1 Tbsp. grated parmesan cheese. Nuke about 45 seconds - to melt the cheese and release the lyocpene (sp?). This is great with eggs, or with a scoop of cottage cheese on the top, and then whole wheat toast.

Roast any veggies you like by tossing them with a little bit of extra-virgin olive oil, salt and pepper, and whatever spices you're in the mood for. Spread on a baking sheet and do in about a 400 oven for 20-30 minutes. OH. Asparagus tastes fantastic roasted like this with....you guessed it - the grated parmesan cheese.

Homemade vinaigrette: 1/4 c. extra-virgin olive oil, 2 Tbsp. balsamic vinegar, 2 Tbsp. pure maple syrup, 1 clove garlic, finely minced, and 1 tsp. Italian seasoning. I NEVER get tired of this dressing. It's a great treat to crumble 1 Tbsp. blue cheese in a salad that has this dressing.
