Lunch today


Kind of running out of ideas... Had some leftover Chile's salsa in the fridge and some grilled chicken. Sauteed some mushrooms (NO OIL, just pam) in a pan, cut up the chicken into bite-sized pieces. Added the chicken and the salsa into the pan just to warm and coat the chicken and mushrooms with the salsa. On 100 calorie whole wheat tortilla I put a little fat free sour cream and fat free cheese. Dumped the warm chicken mixture on to the tortilla and WAH LA.. a nice healthy easy warm lunch that filled up my belly. I am going to need all the energy I can get for my doubles workout today. WHAT WAS I THINKING?? It will be an interesting week for me. Pray for me.

I think I will be ready for a break after weigh in on friday. Love the game but need some new healthy recipes, I am running out of creative fun ideas..
