Veggie Record

I wanted to see how many servings of veggies I could have in a day, just for the heck of it. Here's how yesterday turned out:

Meal 1: smoothie with 1/2 c. o.j. & 1/2 soy milk, plus strawberries & mini peppers

(total servings - 2 fruit, 1 veg.)

Meal 2: plate full of baby carrots, snap peas, and grape tomatoes, with 1 serving hummus

(total servings - 2-3 veg.)

Meal 3: HUGE salad with mixed greens, tomatoes, cucumbers, radishes, avocado, craisins (plus 1 oz. Dubliner cheese)

(total servings - 3 veg.)

Meal 4: dried mangoes with 1 oz. wedge of laughing cow cheese

(total servings - 1 fruit)

Meal 5: Paradise Bakery crumbly blue cheese salad with chicken - I ate half and the other half is for lunch today.

(total servings - 2 veg.)

GRAND TOTAL: NINE servings veggies, TWO servings fruit.
