Ok, this first one, don't be turned off. If we all get together as a group, I will bring these brownies for you to try.
Chocolate Bean Brownies (don't let the name turn you off!)
1 box of brownie mix - for a 13x9 pan
1 15oz can of black beans
1 15oz can of water
Pam
Rince off the beans with cold water really good. Puree the beans really good - it will be very thick. Scoop the pureed beans in with the brownie mix. Do not put in the ingredients that the brownie mix calls for - just what you see above. Rince out the can that the beans came in, and fill with water. Pour the water in with the bean puree and brownie mix. Mix really well. It will look very soupy - this is normal. Pour the mixture into a 13x9 cake pan that has been sprayed with pam. Cook according to the brownie mix directions. Enjoy :). These are full of fiber, so if you plan to have more than a couple, you will need to drink quite a bit of water, else, ... well you get the picture :).
Baked Salsa/Green Chile Chicken
medium jar of any salsa you choose - pace is always on sale, I use that
4-5 frozen chicken breasts - skinless boneless
15 oz can of green chile - any brand
Pour all of the salsa into a 13x9 cake pan, layer on the chicken breasts on top of the salsa, pour all of the green chile on top of the chicken. Bake at 350 degrees for 45 minutes. Take out the pan and sprinkle on low fat ched cheese, I don't do this, but my kids love it! Bake an additional 10 minutes and it is done. My kids love this and I serve it for them on top of spanish rice and with tortilla chips. I love it on top of a salad because I use the salsa/green chile mix as my dressing. I put in black beans, red peppers, and tomatoes in my salad and it is really good and healthy.
Each of these recipes my kids love and it helps me so I don't have to make additional supper for them and for me, we all get to eat the same thing :).
