Vegetable Snack? That tastes like dessert? Do tell...

We have discovered baked yams at our house. They have more nutritional value than a baked potato, and are a great accompaniment for many things we grill. If you make extra, you can nuke a half a yam or so, since full yams are roughly the size of Connecticut. Spray with just a little bit of butter spray, or the tiniest amount of REAL butter. Sprinkle with brown sugar Splenda (a thing to know about if you like oatmeal) - about 1 tsp. - and top with about 1 Tbsp. of low-fat sour cream (I almost always prefer low-fat dairy products to fat-free - as I have this pesky preference for being able to pronounce most of the ingredients, in an effort to know I am still eating actual food). This is kinda like having a creamy yam dish at Thanksgiving, which, let's face it, should almost be dessert anyway. If you like yams, that is. And the best part is - you had a snack or small meal - and got another serving in of VEGETABLE - not fruit - for the day!
